The Pedamaran Estate in Toraja, Sulawesi, produces clean, sweet coffees that are distinctly different from most Indonesian coffees, as they use a wet-hulled washed process and a mechanical drying method. The result is a rich, smooth cup with notes of mango, praline pecan, and hibiscus.
