Details Our Guatemala Ija’tz comes from De La Gente and the Ija’tz Cooperative in San Lucas Tolimán, on the shores of Lake Atitlán. Founded in 1995, the cooperative grows coffee beneath native shade trees while working to protect the land and strengthen its community. Ija’tz means “seed” in Kaqchikel, a fitting name for a cooperative rooted in that work. This washed-process coffee is from the 2026 harvest.
